Did you know the potato chip was invented by a Black man, named George Crum? My friend from Saratoga Springs is visiting and she brought me a box of Saratoga Chips. What's a Saratoga Chip? I bet you didn't know that before we called them potato chips, crispy fried potatoes were known as Saratoga chips. Seriously. Read this website and share the knowledge. And the next time you bite into a potato chip, remember George Crum.

I'm from Saratoga Springs! There is a newish children's picture book out about the George Crum story. Have you seen it?
I had heard the story growing up, but no mention of Crum´s name or race.
I heard this story too growing up except in the version I heard George Crum was Native American. After reading your post, I google searched and came across descriptions of George Crum as "African American," "Native American," and "African American/Native American."
